Zucchini

We have an overabundance of zucchini this year. Between Winder Farms and the farmers market we are set for the season. So what to do with it all? My people don’t do zucchini bread. Nothing against it of course…just something I have never done.

For dinner tonight I made healthy stuffed zucchini. Even Little Sanders loved it. Recipe —> CLICK ME!

I scraped out the zucchini flesh and put it in a blender with the ingredients. I didn’t see that in the recipe.
Instead of mozzarella I used fresh parmesan. I had amazing fresh mozzarella but it disappeared before dinner. Hmmmm.
After this dish we still had about 5 pounds of zucchini left, so I froze it. How to —> CLICK ME!
